Sometimes you just want a sweet little treat to have with a warm cup of tea on a rainy Sunday. A nice sweet treat that isn’t going to completely blow your health goals in you have in place, this recipe is for you!
Ingredients:
- 50g butter
- 1/4 cup honey
- 1/2 cup rapadura or coconut sugar
- 1 cup rolled oats
- 1/4 cup pepitas
- 1/4 cup sunflower seeds
- 1/4 – 1/2 cup dried cranberries
- 3/4 cup spelt flour
- 1/4 cup dark chocolate chips (optional)
Method
Pre-heat the oven to 180°C and line a slice tray with baking paper.
In a small saucepan over low heat, combine butter, honey, sugar and cook until sugar has dissolved.
In a bowl, combine oats, pepitas, sunflower seeds, dried cranberries, flour, chocolate chips (optional) and mix.
Combine butter mixture with dry ingredients and mix well.
Spoon onto a slice tray, wet the back of a spoon and press mixture into the tray.
Bake in the oven for 20-25 minutes until the top is golden brown.
Allow to cool before cutting.
