A great gluten, dairy and refined sugar free treat to enjoy with a nice pot of tea!

 

Ingredients:

2 cups dried dates or medjool dates, pitted and chopped

2 teaspoons bicarbonate of soda

1/4 cup coconut oil

1/2 cup rapadura or coconut sugar

2 eggs

3 cups plain gluten free flour

1 cup walnuts, chopped

1 teaspoon vanilla extract

 

Method:

Pre-heat oven to 180°C and line a loaf tin with baking paper.

Combine dates and bicarbonate of soda with 1 1/2 cups boiling water in a bowl and set aside.

In a mixing bowl, add coconut oil, sugar, eggs and beat until becomes light in colour and fluffy.

Add flour, dates, walnuts and vanilla extract and combine.

Pour into the prepared lined loaf tin and bake in the oven for approx. 35-50 minutes or until a skewer comes out clean when put into the middle.

Allow to cool slightly before removing from the loaf tin.
