Ingredients:

  • 4 x bananas
  • 5 eggs
  • 1/2 cup coconut oil
  • 5 medjool dates, pitted
  • 1/4 cup chia seeds
  • 3/4 cup of coconut flour
  • 1 tsp vanilla extract
  • 1 tbsp ground cinnamon

Topping:

  • Flaked or shredded coconut
  • Extra ground cinnamon

Method:

  • Preheat oven to 150 degrees and line a loaf tin with baking paper.
  • Place all ingredients except toppings into a bowl. Using a hand beater or thermomix, beat all ingredients until smooth, roughly 1 minute.
  • Pour ingredient into loaf tin and place shredded coconut and cinnamon on top.
  • Bake in the oven for 45 – 50 minutes or until cooked through.
  • Serve warm or store in an airtight container on the bench for up t0 3 days.
