Ingredients:
- 4 x bananas
- 5 eggs
- 1/2 cup coconut oil
- 5 medjool dates, pitted
- 1/4 cup chia seeds
- 3/4 cup of coconut flour
- 1 tsp vanilla extract
- 1 tbsp ground cinnamon
Topping:
- Flaked or shredded coconut
- Extra ground cinnamon
Method:
- Preheat oven to 150 degrees and line a loaf tin with baking paper.
- Place all ingredients except toppings into a bowl. Using a hand beater or thermomix, beat all ingredients until smooth, roughly 1 minute.
- Pour ingredient into loaf tin and place shredded coconut and cinnamon on top.
- Bake in the oven for 45 – 50 minutes or until cooked through.
- Serve warm or store in an airtight container on the bench for up t0 3 days.
